Here’s a recipe from us to you, featuring the tiny but mighty mung (or mungo…or moong) bean //
Mungo beans are one of the healthiest plant proteins around, their place in human history is evidence. These beans are a cornerstone of #Ayurvedicculinary tradition and are considered “one of the most cherished foods” in ancient far-East diets. These little legumes are rich in phytonutrients and antioxidants, and are a high source of manganese, potassium, magnesium, folate, copper, zinc and various B vitamins. They are a protein-packed and filling food, with lots of dietary fiber. A plant-based diet brimming with powerful foods like mungo beans is a key to lowering inflammation in the body and securing health and vitality. Sprouting these babies only adds to their benefits…but you don’t have to sprout the beans to make this soup tonight!
